What you need:
- 150g butter, softened
- 150g caster sugar
- 175g self raising flour
- 3 eggs
- 1tsp vanilla extract
- 50g choc chips. (I am a very generous person so I put a lot more than 50g ;p)
- Preheat oven to 180 C.
- Line a 12-hole muffin pan with cupcake cases. (In my case, I use a hard muffin cases so I don't have to use the muffin pan)
- Crack the eggs into a small bowl and slightly beat them with a fork.
- Put all ingredients (except for choc chips) in a large bowl and beat with an electric mixer until batter is very light and fluffy.
- Add in choc chips and mix them with the batter.
- Divide the mixture evenly between the baking cases.
- Bake for 18-20 minutes, or until risen and firm.
- Allow to cool for a few minutes then transfer to a wire rack to cool completely.
