#11 CHOCOLATE CHIPS CUPCAKES W/O ICING

As I promised, here are my family's all time favourite cupcake! I assume so cos they always ask me to bake them. That's why I made them without the icing. We're not actually a big fan of sweet things. hehe. My brother even wanted me to make them as his campur. 150 of them! :D It's actually a basic choc chips cupcakes. I found the recipe from my friend's sister. Here is her blog. I personally adore her blog, I mean, it literally has EVERYTHING! mmkay, I sound exaggerating but see for yourself! :D I remember the ingredients and steps cos oh well, I've made them like a lot of times and so yeah, I'll just post the recipe here.

What you need:
  • 150g butter, softened
  • 150g caster sugar
  • 175g self raising flour
  • 3 eggs
  • 1tsp vanilla extract
  • 50g choc chips. (I am a very generous person so I put a lot more than 50g ;p)
What yo do:
  1. Preheat oven to 180 C. 
  2. Line a 12-hole muffin pan with cupcake cases. (In my case, I use a hard muffin cases so I don't have to use the muffin pan)
  3.  Crack the eggs into a small bowl and slightly beat them with a fork.
  4. Put all ingredients (except for choc chips) in a large bowl and beat with an electric mixer until batter is very light and fluffy.
  5.  Add in choc chips and mix them with the batter.
  6. Divide the mixture evenly between the baking cases.
  7. Bake for 18-20 minutes, or until risen and firm.
  8. Allow to cool for a few minutes then transfer to a wire rack to cool completely.

    That's all you need and TADAAA~ perfect cupcakes to serve with tea/coffee/milo for a good evening with your family. They're also perfect to be given as gift. Yummy and pretty. ;)

    #10 SAWADEEKAP

    I haven't been posting these past few days cos I've been busy preparing for my brother's engagement, teaching and stuffs. I even forgot my password. hahaha. Well, I had lunch um, last Thursday? with my lovely friends. hehe. We ate at Bannu Cha, a Thai restaurant. We ordered typical Thai dishes like Mango Thai Fish, Pandan Chicken, Thai Green Curry, Coconut Prawn and of course, plain rice. Had some pictures taken, so here they are!

    #9 A taste of India

    It has been along time since we didn't dine in this Indian cuisine restaurant, Nadj. I think the food is good and the prices are okay. Well suitable with the food lah. So we went there last night. I ordered a plain Naan and Chicken masala (YUMMMM!) Bapa ordered Dosai telur masala (YUMM-ER! haha) and my sister ordered Mee Goreng Ayam. We shared the food as the sizes are yes, big. One naan can be shared among 2/3 people and the dosai is stuffed with potatoes so yeah. I grab my chances to take some photos and so here they are!

    #8 FOOD FIESTA

    We just had a family gathering and yes for sure, we had a lot of food! I made spaghetti and garlic bread while mama made beef, fried chicken, sweet corn and pumpkin. Then the others brought more and more food so lets call today as a food fiesta day! :D had a great time with them and promote my cookies although my niece didn't like them. So sad. :( but the others said it was good and they said I need to improve the texture. hehu. I didn't get the chance to take a lot of photos, but here are some of them! :)

    AWESOMENESS!
    Quick ways to make garlic bread:
    1. Mix salted butter and mashed garlic together until they look almost liquid-ish
    2. Cut the french loaf (you can get one at Giant) into pieces.
    3. Spread the butter and garlic mixture at one side of the breads.
    4. Wrap them in aluminum foil 
    5. Put them in the oven set at 175 degrees C for about 20 mins.

    #7 STARBUCKS AND McD

    I went to Miri yesterday with my mama and my sister. It was a chaotic trip yet so fun and fun and fun! We were lost in KB for about half an hour just to find the oil station. Fuhh. Then we went to KFC for lunch before we proceed to our trip to Miri. As we got there, we straight away went to Parkson. Bought some stuffs and yes of course, we're one of the typical Bruneians, chilling at Starbucks yo! Mama was tired so we decided to rest there for a while. I bought my all time favourite drink, double chocolaty chips. Yes of course, chocolate! :D andddd Banana chocolate chips muffin! It was the greatest muffin ever! It's far far faaaaaar more delicious than the muffin I made. :( After that we tapau McD to bring back home. Well, let the pictures do the talking!

    #6 CHOCOLATE CHIPS COOKIES

    Chocolate chips cookies. Who doesn't like chocolatey taste cookies. :D I made 3 batch last night. YAAY! Well, my 1st batch did NOT turn out close to well, HAHA. They're so flat but taste quite good although they're so sweeeeeet. But it turned out to be pretty good after the 2nd and 3rd batch. So round and cookie like. Not so perfect but oh, first time making them, kinda proud of my self. :p

    So here's the recipe :-

    What you need :-
    • 3/4 Cup White Sugar (I would prefer to decrease the amount of sugar cos its so sweet. Unless you like sweet things, that wouldn't be a problem :) )
    • 3/4 Cup Brown Sugar
    • 1 Cup Margarine
    • 1 tsp. Vanilla Extract
    • 1 Large Egg
    • 2 1/3 Cups White Flour
    • 1 tsp. Baking Soda
    • 1/2 tsp. Salt
    • Chocolate Chip( I used about half bottle of choc. chips)
    What to do :-
    1. Heat oven to 175 degrees C. 
    2. Mix the 2 types of sugar, margarine, vanilla and egg well. 
    3. Stir in flour, soda, salt, and chocolate chips. 
    4. Dough should be firm. ( I used my hands to mix the dough. With gloves, of course :p )
    5. If it isn’t, add in a touch more flour and mix thoroughly until it is firmer.
    6. Drop the dough by rounded spoon about 2 inches apart onto silicone (or greased regular) baking sheets. ( I used the 1tsp measurement spoon to shape the dough and do not flatten it. If the dough is big and flat, in the end, it would be bigger and flatter like my first batch of cookies D: )
    7. Bake about 10 minutes until edges are lightly browned (or lightly burned for more crunchiness cos I think I baked longer than 10 mins)
    8.  They may be soft when they're hot but let them cool and you'll have a very delicious and a crunchy cookies.
    For this recipe, you can make at least 3 batches of cookies. Depending on the size of the cookies. :) If you want the cookies to be soft, bake for about 8 minutes. Click here for the original. :)

    #5 BEEF TOAST SANDWICH AND FRIED POTATO (WEDGES)

    I woke up late yesterday, as always, like everyday :p and my tummy demanded for food. I'm always hungry, I wonder why. D: and so I planned on what-to-eat while I was in my shower. I feel so lazy to cook heavy food and so, the idea of a simple dish came straight to my mind. Beef toast sandwich and fried potato. Actually I was planning to make a potato wedges but it didn't turn out to be like a potato wedges so, fried potato it is. But as I am so indecisive about the name, I'll call it fried potato wedges. They tasted the same, so yeah. :p I added scrambled eggs and thin slices of cucumber to the sandwich and yes, YUM!

    As I was supposedly post this yesterday but something happened to my dad's memory card but thank God I can recover back the photos. Millions of thank you to that someone. hewhew.

    It wasn't really a special dish, but, they're still food. haha

    The so-called fried potato wedges. It's still delicious anyway.

    So, a quick review on how to make this fried potato(so easy that I really don't have to type this but I just want to :p) :- 
    1. Wash the potatoes. Do not peel the skin off.
    2. Cut the potatoes into shapes. Preferably a normal potato wedges shape.
    3. Mix all the cut potatoes with some salt. Not too much unless it would be salty.
    4. Cut small spaces onto the potato so that it would be easy to cook the inside of the potato and it would be softer.
    5. Fried the potatoes.
    6. Serve while its hot! Add more salt if you need it. :)
